Our Extraction Lab is equipped with state-of-the-art brewing equipment you need to start your coffee journey on the right foot.

Pull a shot on our Decent DE1CAFE or Kees van der Westen 2-group Spirit, and throw the sample in a centrifuge to measure extraction. Measure your manual brewing skill against an XBloom. Cup coffee samples using different GH/KH combinations. The possibilities are endless!

    Paolo has been a featured speaker and coffee instructor, and has been featured in classes in New York, Los Angeles, Japan, the Philippines, and Guatemala.

    In 2021, Sprudge named him one of the "Sprudge Twenty" Honorees: a group of extraordinary coffee personalities who inspire the field of specialty coffee.

    Paolo is an instructor for the Intro to Roasting and Roasting Intensive courses.
